My Mother-in-law's Cornbread Dressing
4 pkgs. Corn Kit Cornbread mix
10 eggs
2-3 cups of milk
Vegetable oil
3 slices of stale bread, small pieces
5 cans of chicken broth
2 large white onions, chopped
10 green onions, chopped
1 stalk (10 ribs) of celery, chopped
2 sticks margarine
1 tbls black pepper
3 tbls sage
Prepare cornbread according to package directions. In a large roasting pan, crumble cornbread with stale white bread. In a large saucepan, cook onions and celery in margarine. Add vegetables and chicken broth to bread stirring until well mixed. Stir in sage, salt and pepper tasting for the desired flavor. Add additional spices if needed. Add 6 slightly beaten eggs and stir. The mixture should have a very slight slouchy consistency. Add more broth, margarine or turkey drippings if needed. Bake in 350-degree oven for approximately 1 hour or until center is firm and the top is golden brown. Serve with giblet gravy and cranberry sauce.
